Don’t know about you, but autumn here in Copenhagen has come in full swing and got us all wrapped in blankets, unwilling to move out of the house for the good part of the day. Actually, that’s probably just me – Danes have the saying that there is no such thing as bad weather, but only poorly dressed people (not enough layers?). I kind of get that but then again, it is just too windy for my taste.
For me, autumn is the season of soups. I have always LOVED soup and I always will but I definitely consume it hundreds of times more during the autumn. Soup is always best with a nice slice of bread by its side and perhaps a bit of butter. Other options that easily go to the sides of soups are tortilla chips, crackers and croutons. The best part is that soup is probably one of the most versatile vegan dishes out there, and unlike many other things, vegan soup is also always full of flavor (thanks vegetable stock).

Today, I want to list my 8 of my favorite vegan soup dishes that will help you survive the autumn and prepare you for the cold winter. Then when winter comes, I’m gonna have to give you top 15.

Note: This one is with coconut milk. I myself, do not enjoy coconut milk but others I’ve made this soup for love it!
