Autumn in Copenhagen has come in full swing and got us all wrapped in blankets, unwilling to move out of the house for the good part of the day. Actually, that’s probably just me – Danes have the saying that there is no such thing as bad weather, but only poorly dressed people (not enough layers?). I kind of get that but then again, it is just too windy to do anything outside…and that is when vegan soup comes in to make you a little bit warmer. Vegan soup recipes are great because many of them are accidentally vegan and so easy to make! Veganizing soup is also incredibly easy most of the time since all it takes often is simply replacing the cow milk with a plant-based option.
For me, autumn is the season of soups. I have always LOVED soup and I always will but I definitely consume it hundreds of times more during the autumn. Soup is always best with a nice slice of bread by its side and perhaps a bit of butter. The best part is that soup is probably one of the most versatile vegan dishes out there, and unlike many other things, vegan soup is also always full of flavor (thanks vegetable stock).
